My son made this with cauliflower instead of wheat. Here’s the recipe:
Ingredients
1 head cauliflower, riced (blender)
1/2 cup shredded mozzarella
1/4 cup grated Parmesan
1/2 teaspoon dried oregano
1/2 teaspoon kosher salt
1/4 teaspoon garlic powder
2 eggs, lightly beatenPreheat oven to 400*F. use parchment
Rice cauliflower; boil for 5 min in inch of water. If boiling over, it’s done.
Strain with wired strainer then pat out every drop of water you can with towel.
Mix all ingredients together. Mix/blend well.
Bake 25 min. add sauce and cheese, bake another 10 or until cheese on top is bubbling.
It was really delicious.
The photo also shows some pepperoni on top. You can use anything of course, more veggies, more sauce, etc.
