My Blog followers and my Twitter followers have requested the recipe, so here goes:
Irish Potatoes
2 lbs. frozen hash brown potatoes
1 tsp. salt
1//2 cup melted butter
2 Tbsp. minced onion
1/2 tsp. pepper
2 cups sour cream
1 can potato soup
1 cup grated cheddar cheese
dash of parsley
2 Cups crushed corn flakes (or special k)
- Place potatoes in 13 x 9 pan, lightly greased (Lasagna pan is good)
- In a bowl, mix cheese, parsley, and cornflakes
- In a bowl, mix remaining ingredients
- Spoon creamed mixture over potatoes
- Add cheese, cornflakes mixture on top
- Bake at 350 degrees for 40-60 min.
My mother-in-law gave me this recipe from her hairstylist. So you know it’s good. 🙂 I have made this several times, and even with my mistakes (forgetting ingredients, etc.) it still comes out edible every time. It’s a good dish to bring to parties and bbq’s, even for brunches, as it goes with anything. You can’t go wrong with potatoes and cheese, according to Bailey.
