“This meal is not exactly like the recipe said, I didn’t have an ingredient so I substituted another. Oh, and I put in a Tablespoon of salt instead of a teaspoon. I didn’t have my glasses on when I read the recipe. It should be edible, but I don’t know how good it will taste.”
My dog Bailey heads for the door as soon as he senses that the oven is on. I have set the smoke alarm off many times. Loud piercing noises are not good for doggie ears.
Since I am back on Weight Watchers, I am counting points. Every food has a point value, based on fat, carbs, fiber and whatever.
So I whipped up these Cuffins. Part cookie, part muffin. Huh, Kinda sounds like “coffin.” Heh. They are cookies that rise high like muffin tops. Well, they’re edible because I’m hungry. I took an Oatmeal cookie recipe and lightened it up.
Here’s what I used:
1 cup quick oats (8 points)
½ cup flour (anybody know how many points?? I can’t find my book.)
1 smushed banana (zero points baby, and yes, “smushed” is the technical term.)
1 apple, peeled, chopped and smushed (ditto)
1 egg (5 points)
1 Tablespoon of butter (anybody know the points??)
• Baking soda (or was it baking powder? I don’t know the difference, except one helps the fridge be less stinky.)
Mix it up real good in a bowl.
Oh yeah, first preheat the oven to 350.
Plop large tablespoons of the stuff onto the cookie sheet.
Bake for 15 minutes. Well, first wait until the oven hits 350.
And here they are: Cuffins.
These are NOT a prize-winning dessert, just something to eat when you are trying to feel full and trying to cut down on the calories. Yes, I probably should have had a salad…..
Does anyone know the point values of the flour and / or butter?
Oops I just noticed I left out 1 tablespoon of brown sugar. See what I mean?
